Since ancient times Crithmum maritmum was widespread from the Black Sea to the Mediterranean, to the English Channel to the European Atlantic coasts, and collected on the rocks and cliffs along the seafront to be eaten as a vegetable in salads.

Crithmum maritimum is a perennial edible plant with ribbed stems and fleshy foliage.

Leaves, stems and even inflorescences can be eaten in salads, cooked in butter or preserved in pickle.

In Spain and Greece Rock samphire is still used today as an aromatic herb in fish dishes.
