Botanical name: Rumex scutatus

Rumex scutatus is a small herbaceous perennial and robust.

The hairless foliage shaped like a shield, a feature referenced by the epithet "snake", is very good to consume since the pleasant acidulous taste. The leaves are put in salads or in fish impart to them a taste particularly fresh. Also excellent in sauces and soups.
