Pimpinella

Botanical name: Sanguisorba minor

Commonly called "pimpinella", Sanguisorba minor is an herbaceous perennial plant native to Europe.

Small serrated leaves of this plant are highly aromatic and taste similar to cucumber. Great to be consumed fresh in salads or cooked and served with other herbs.

The infusion of the leaves is usually used as an astringent and expectorant. For outdoor use the Burnet is also an excellent Haemostatic. **
