Hoja santa

Botanical name: Piper auritum

Piper auritum is a perennial aromatic varieties native to Mexico.

Widely used in local cuisine, heart-shaped leaves of this plant are used by the complex aroma and peppery flavor to gently, grinding and sauces, meat and fish dishes, and the stems, which can be eaten in salads.

Very impressive is a particular culinary use of this fantastic foliage. In it are in fact shrouded the dishes, so that the aroma of the leaf to propagate through the cooking meat. The leaves softened can then be eaten like spinach.

In the place of origin the so-called "Hoja santa" Holy leaf, arrives at a height of more than three meters.
