The zolfino rennet is widely used as difficult for the coagulation of the latte in the production of cheeses.

In some areas it is customary to use fruits such as the coffee plant (the seed can be toasted with the same procedures as the coffee plant).

The infusion of sulfur rennet is also used in some liqueurs and digestive bitters. It is a hardy and cold-resistant herbaceous species.
